Álvaro has an exceptional culinary background and studied cooking at the Hofmann Hostelry School in Barcelona, Spain. Later, while washing dishes at a Latin American restaurant in Paris, he studied at Le Cordon Bleu where he left to work at the restaurants of Joël Robuchon, L'Hotel Bristol under the command of M.O.F. Eric Frechon and Itinéraires working for Sylvain Sendra. He traveled to New York after four years to work at Thomas Keller's Per Se.

After some time, he traveled to Europe again to work at Noma in the city of Copenhagen, Denmark under the direction of Chef Rene Redzepi. In 2012, before returning to the country, he had the opportunity to work in New York at Atera, Matthew Lightner's restaurant.

He created the menu for the Gaspar restaurant in Bogotá and is currently the Chef there, running the El Chato project.
